Black Gulab jamoon

How about nation’s favourite desert? Yeah that’s nothing but an Black Gulab jamoon aka kaala jamoon.

This jamoon made of khoya and cottage cheese. These jamoon gets its brownish red colour because of sugar in khoya(Mawa)

And here i prepared instant khoya at home, so that I can prepare that perfect kaala jamoon.

Ingredients for khoya

  1. 1tsp ghee
  2. Half cup milk
  3. 4tsp cream
  4. 1cup milk powder

Ingredients for jamoon

  1. Half cup cottage cheese crumbled
  2. Khoya
  3. 2tsp plain flour
  4. Pinch of baking soda
  5. 1tsp milk
  6. Oil to deep fry

Ingredients for sugar syrup

  1. 2 cup sugar
  2. 2 cup water
  3. Cardamom powder 1tsp
  4. Half tsp lemon juice

Ingredients for stuffing

  1. 1 tsp of almond chopped
  2. 1tsp of cashews chopped
  3. Sugar powder 1tsp
  4. Yellow/red/orange food colour (any)

Method

In a large bottom pan, add ghee, cream and milk mix nicely then add milk powder mix nicely untill you get a nice dough texture. Now the khoya is ready.

Then in large mixing bowl take crumbled paneer, mash the paneer till it forms a smooth dough. Now add prepared khoya and mash well.

Further add plain flour, baking soda, milk and combine well.

Then for stuffing take all the chopped dry fruits, sugar, food colour and mix well with small amount of jamoon dough.

For making sugar syrup add sugar and water in a large vessel, let it simmer untill the sugar dissolves.

The sugar syrup consistency should be like honey, we don’t need any 1 or 2 thread syrup. Once it’s done add cardamom powder and lemon juice.

Head a oil for deep fry now (low flame) and take small size jump from dough and roll into round shape.

Now fry the jamoons, fry till the balls turns black. Make sure the flame in low flame.

Then once it’s done immediately, drop the fried jamoons into hot syrup.

Cover the lid for 3hrs.

Serve when the jamoons are double in size.
