Brinjal fry

There are many recipes that we do using brinjal.

In those so many brinjal recipes I choose this one, because it’s something yummy that we can eat with chapathi or even with rice and dal.


  1. Bartha brinjal/ large aubergine (less seeds)
  2. Green chillies 1
  3. 4 garlic cloves
  4. Red Chilli powder half tsp
  5. Coriander powder 1tsp
  6. Turmeric powder half tsp
  7. Besan flour 2tsp
  8. Water to sprinkle
  9. Crushed Kasturi methi 1tsp
  10. Garam masala 1tsp
  11. Oil to pan fry
  12. Salt to taste


Cut the brinjal into round shape, something like 0.5 cm thickness.

Make paste of green chilli and garlic, then keep aside.

Take a large bowl add all the mentioned ingredients above, along with garlic and green chilli paste then sprinkle little bit water, then keep aside to marinate for 15min.

Then place the brinjal slices on medium flame tawa, add little oil around all the sides of brinjal. After 5min flip the brinjal.

Once the brinjal slices turns golden brown, it’s done.
