Veg Kurma are something that blended with some 3 to 4 kind of vegetables, and this kurma always go with all type of chapathi, roti’s, poori’s and Even with ghee rice.
Normally I prepare Kurma with poori’s in the morning time as breakfast, but today I thought of preparing for dinner with ghee rice.
This Kurma is an hotel style kurma,I got this simple recipe from one of my friend back in 2015 from that day I’m fallowing same till now .
It’s completely south indian style.

- One cup chopped french beans
- One cup chopped carrot
- Half cup green peas
- One cup chopped potato
- One cup cauliflower florets
- One bay leaf
- One onion chopped
- Ginger garlic paste 1tsp
- One spoon ghee
- Freshly shredded Coconut 2tsp
- Poppy seeds 1tsp
- 6 to 8 cashews
- 2tsp oil
- Cinnamon 3 small pieces
- Cloves 5
- Green Cardamom 2
- 2 green chilli slit in the middle
- Red chilli powder 2tsp
- Turmeric powder 1/4 tsp
- Coriander powder 1tsp
- Garam masala 1tsp
- One chopped tamoto
- Hot milk half cup
- Coriander leaves 1tsp
- Half cup water
- Salt to taste
First pressure cook the chopped beans, carrot,green peas and potato just for 2 whistle. (Except cauliflower florets)
Now in a mixer grinder add coconut, poppy seeds and cashews and make a fine paste with half cup water, then keep aside.
In a heavy bottom vessel add ghee and oil, once it’s heated, add bay leaf, cardamom, cinnamon and cloves once you started getting nice aroma then add chopped onions and green chillies.
Once onion gets soft then add ginger and garlic paste, fry till the raw smell of ginger garlic goes.
Then add chopped tamoto and salt cover and cook till tamoto are soft then add all masala powder like turmeric, garam masala, coriander powder and red chilli powder mix well.
Then add coconut paste with little amount of water and add cauliflower florets cover and cook till the cauliflower are done. (If you pressure cook cauliflower it will become paste )
Once the cauliflower are done cooking add boiled vegetables with water, now close the lid and cook for 5min.
Once the masala’s combined with vegetables add hot milk mix well and keep the flame in very low and cook for again 2min .
After that garnish with chopped coriander leaves.
That’s it, serve hot with ghee rice or chapathi or even poori’s.
