So today I came up with two different fried snack/prasadam for chaturthi. Chakli and Tengolu/Tengolalu.
Both made up of black gram/urad dal. If you cook urad dal once you can do both chakli and Tengolu. It’s completely traditional way of making, not something like instant recipes.
Ingredients for Tengolu
- 1 cup black gram/urad dal
- water 2 cups
- 3 cup rice flour
- 1/4 tsp hing
- 1 and half tsp room temperature butter
- 1/4 tsp carom seeds/ajwain
- Oil for deep fry
- Sesame seeds half tsp
Pressure cook urad dal, once it’s cool down grind it into a fine paste (don’t add water ) then transfer it into another big bowl, add rice flour, hing, butter( don’t add more butter) ,sesame seeds, salt and carom seeds mix well it to smooth paste by adding sufficient amount of water.
Don’t make the thin dough.
Now take a chakli maker, and put the thee holes plate. Then fill the chakli maker with dough and press into round shape in a plastic sheet.
Keep the oil for heating, once it’s heated pass tengolu into the oil and deep fry it untill it turn golden colour.flip the tengolu into another side .
That’s it, Tengolu is ready. Once it’s cool down store it in air tight container.
Ingredients for chakli
- One cup urad dal
- 3 cup rice flour
- Hing 1/4 tsp
- Sesame seeds 1tsp
- Jeerge mensu (optional)
- Red chilli powder 2tsp
- Cumin seeds 1tsp
- 5tsp oil
- Water 2 cup
- Oil to deep fry
Pressure cook urad dal, once it’s cool down grind it into a fine paste. ( Don’t add water) then transfer it into another big bowl
Heat 5tsp of oil in a small bowl on hight heat, once it’s heated add that heated oil to the paste with rice flour and mix very well.
Then add hing, sesame seeds, salt, jeerge mensu ( if you didn’t got, jeerge mensu add red chilli powder) cumin seeds and make a dough.
Now stuff the dough into the chakli maker(use start shape plate) and press round shape.
Keep oil for heating, once the oil the hot enough , carefully place the prepared chakli into the oil, after a minute flip the chakli into another side .
Fry until it turns golden brown, once it’s turn golden brown both the sides, take off.
Once it’s cool down keep them in air tight container.
