There is something exciting happening in my kitchen from few days as you guys know already!!
Ganesha’s favourite, here is the modaka recipe, of rice flour with a mixture of Jaggery and coconut fill.
This steam modaka is favourite sweet for my husband too, so I have two reasons to prepare modaka everytime.
And These days people are doing different types of modaka like chocolate modaka, dry fruits modaka, mango modaka, what not !!and I really appreciate that 🙏😊
But I end up with same traditional way of jaggery filled modaka’s , using modaka mould.
Just one day to go for festival, and I have so many things to do in my list.
Ingredients for rice dough
- Rice flour one cup
- Ghee 1tsp
- Water one and half cup
- Pinch of salt
- Modaka mold
Ingredients for sweet filling
- Freshly grated coconut 1.5 cup
- Jaggery grated 1 cup
- Cardamom powder
- Ghee 1tsp
Method for making sweet filling
Heat a pan in medium flame, add ghee , grated coconut and Jaggery.
Mix well till the jaggery melts, stir and cook till the moisture from Jaggery begins to dry. Add cardamom powder then give last mix and allow it to cool down.
Method for making rice dough
Heat a pan add water, salt and ghee once it’s start boiling add rice flour gradually, mix the flour with water.
Switch off the flame and cover the dough for 5min.
Now take the dough in a separate plate and knead well. If you feel the dough is hot while kneading apply some water on your palms and knead.
Now grease some ghee to modaka moulding and take a portion of the dough, press it into the cavity of the modaka mould till it is evenly lined on all the sides .
Take a smaller portion of sweet and fill,again take smaller portion of the dough and fill the base, then demould the modaka mould.
Once all modaka are done, place the steamer and arrange all the modaka’s into it and steam for 5 to 7min.
Then serve warm.
