Especially for me, autumn, winter and rainy season are meant for soups. I like all kind of soups.
So Today I came up with pumpkin soup, creamy and wonderful flavour that I can have for this wonderful autumn day.
- Two tsp of olive oil
- 400 grams pumpkin
- 700ml vegetable stock or water
- 4tsp of double cream
- One onion chopped
- One garlic pod chopped
Take peeled and chopped pumpkin into chunks.
Heat 2tsp of olive oil in a large saucepan, then add chopped onion and garlic. Cook for 5min, untill soft.
Add pumpkin and cook for 8 to 10min, with lid closed in very low flame.
Add vegetable stock or water, salt and pepper. Bring to the boil, then simmer for 10min untill the pumpkin is very soft.
Now add 3tsp of cream save that 1tsp for garnishing. Mix well and bring last boil. Switch off the flame. Then puree with a hand blender, if you want that extra velvety texture, you can fine sieve.
Reheat the soup if needed, taste for seasoning, then serve with cream on top for garnishing.
