Medhu Vada

Medhu Vada is my all time favourite, whenever I visit any hotel in india, I make sure that i order vada no matter what.

I just love the texture of the Vadas, crispy outside and softness inside. Vada and sambar makes amazing combination.

From many days I was craving to have medhu Vada, so finally I made it today.

My mom used to do Vadas perfectly just like hotels , she has learnt this recipe from my grandfather , where he had a hotel once up on a time.

I have seen so many versions of Vadas like people soak urad dal for 5 to 6hr, but it’s totally unnecessary. The recipe I’m sharing here is easy to make but amazing to eat.


  1. 2 cup urad dal
  2. 2tsp rice flour
  3. Few Curry leaves chopped
  4. Pinch of baking soda
  5. Salt
  6. Black pepper roughly powdered
  7. Green chillies 3 chopped
  8. Coconut chopped into pieces half cup
  9. Cumin seeds half tsp
  10. Oil to deep fry


Soak urad dal for one or one and half hour with a enough water.

Now take soaked urad dal in a mixer grinder and grind fine paste using little water. Transfer the paste into another mixing bowl add rice flour flour, salt and baking soda and mix very very well.

Now add all other ingredients and give another nice mixer.

Keep the oil for heat, oil should be in medium flame.

For making vada take a bowl of water, make Ur hand wet and take a small amount of batter in Ur hand give it a round shape(donut shape) make a small hole in the middle.

Slid the vada into the hot oil, once the vada is slight golden gently turn around. Fry untill the Vadas become crisp.

Make sure you cook Vadas in medium flame, because it has to cook inside also.

Once Vadas are done, serve with hot sambar or chutney.
