Chole (chick peas) curry or chole masala are something that i love to eat anytime, chole curry are something that goes well with any rice like jeera rice or ghee rice and even with plain parata, poori’s or chapati.
If you had to get it right, we need to create good recipe for chole masala powder. Here is the best chole masala powder recipe that I learnt from one of my friend.
- Cumin seeds 1/2 cup
- Fennel seeds 1/2 tsp
- Shahi jeera 1tsp
- Cloves 1/2 tsp
- Star anise 4 to 5
- Black peppercorns 1tsp
- Green and black cardamom pods 1tsp
- Bay leaves 5
- Whole red chilli 20
- Cinnamon sticks 10
- Roasted sesame 1/4 cup
- Coriander seeds 1/4 cup
- Dried mango powder 1/4 cup
- Dried ginger powder 2tsp
- Black salt one and half tsp
Heat a pan, and add in one whole spice at a time and roast it in low flame. Take it out in a plate.
Similarly, roast the remaining whole spices one after the another , don’t roast the powder spices.
Then transfer them into mixer grinder along with powder spices and grind them into fine powder.
Store the powder into air tight container and can save for upto 4 months.
Note: black salt can be add while cooking the chole masala also.
