Am I the only one who craves for soups on cosy winter days ?
I love tomato soup but for the change I’m addicted to this simple and healthy onion and broccoli soup.
Less ingredients and quick to make.
- Broccoli 200grm
- Half medium size onion chopped
- Half tsp pepper powder
- Salt to taste
- Cream 1tsp for garnishing
- Milk 250ml
- Water 300ml
- Few coriander leaves for garnishing
- One tsp of olive oil
Keep water to boil, once it’s started boiling add broccoli, cover and cook untill it’s soft.
Now in another soup pan add, add oil once heated add onion chopped, fry till it’s translucent then add pepper, salt and cooked broccoli along with water. Let it boil for 2min.
Then add milk, again allow to cook for 3min in very low flame, now switch off the flame and allow it cool completely.
Once it’s cool down, blend the soup with hand blender or even you can blend it with mixer grinder.
Transfer the soup into soup pot and cook for few minutes till it becomes hot.
Now serve hot and garnish with cream and coriander leaves.
