Eggless plum cake

Before starting the recipe, let me tell you all that I’m not an baking expert nor any cake expert .

Me and Mr.Mine are not even any bakery food fans, back in India we love only few food from bakery i.e., puffs , bread toast and spicy bun, so I never got any chance to learn more about any bakery recipes.

And I always love plum cakes (home made), so whenever the Christmas season comes, I always request my Christan friends to get me few pieces, but now the things are change so I prepared by my own.

I got this recipe from one of my Christan friend again. I failed twice but atleast I successfully finished doing the cake.

So if you fail for the first time in baking cake don’t give up, just try again and again, definitely it’s going to come perfectly.


  1. Tutti fruiti two tsp
  2. Black Raisins one tsp
  3. Chopped cashews
  4. Chopped almonds
  5. Chopped dates
  6. One tsp baking powder
  7. Half tsp baking soda
  8. 1/4 cup melted butter/vegetable oil
  9. Water 3tsp
  10. Sugar 1tsp
  11. Milk powder 2tsp
  12. One cup all purpose flour
  13. Half cup milk
  14. 3/4 cup sugar powder
  15. Half tsp cinnamon powder
  16. Half tsp dry ginger powder
  17. Half cup orange juice
  18. One tsp vanilla extract


In a mixing bowl add orange juice or taking any tropicana juice, here I added fresh orange juice then add tutti fruiti, dry fruits and soak for 30min or 1hr.

Heat a pan, once it’s heated add one tsp of sugar and melt. First it will melt then dark brown caramelized colour, keep stirring then switch off the flame and add 3tsp of water keep stirring.

Now add caramelized sugar into soaked fruits bowl, place the sieve and add flour, baking soda , baking powder, sugar powder, milk powder, cardamom and dry ginger powder and mix nicely.

Now take off the sieve and mix nicely, then add vanilla extract, oil and milk, make sure that you add milk little by little.

Check the texture of the batter , it should not be so thick or thin.

Meanwhile preheat oven in 180 degree Fahrenheit for 10min. And spray, line and flour an 8*3 inch pan or one loaf bread pan.

Pour the batter into the pan, and bake for 30min, after 30min insert a tooth pick in the middle of the cake. If it comes out clean, the cake is done. If the tooth pick has a little batter sticking, bake for 10 minutes more and check again. Remove the cake from the oven and let it cool in the pan until room temperature. Gently invert the pan and remove the cake from the pan and store it in an air tight container. The flavor of the cake improves the next day.
