If there is no vegetables in my kitchen I always choose making something with eggs,
I make egg gravy/or egg recipes in many ways, I also shared egg Kurma here.
This spicy egg curry is a delicious and wholesome main course that can be prepared using some easily available ingredients.
This can be whiped up quickly for lunch or supper. Can serve with white rice or even with chapati or pulka ..
Ingredients
- Hard boiled eggs 4
- Oil 3 to 4 tsp
- Turmeric powder 1tsp
- Cumin seeds 1tsp
- Cloves 2
- Cinnamon 1inch
- Green cardamom 1
- Two onion chopped finely
- Ginger garlic paste 1tsp
- One green chilli slit into a part
- Two tomato paste
- Coriander powder 1tsp
- Red chilli powder 1tsp
- Water 50ml to 100ml
- Garam masala 1tsp
- Kasuri methi half tsp
- Coriander leaves chopped few
- Salt to taste
Method
Take a hard boiled eggs 4 nos and poke them or make a gashes , and in kadai add 1tsp oil and half tsp turmeric powder once oil heated fry eggs till it form a crispy outer layer.
In the same pan add 3tsp oil, once heated add cumin seeds, cloves, cinnamon and green cardamom fry untill cumin seeds turns red, now add chopped onion and ginger garlic paste fry untill the raw smell from ginger garlic goes.
Now add tomato paste, turmeric powder and green chilli cook untill the oil separates from gravy, once oil separates add coriander red chilli powder, salt and add water (first add 50ml water if it’s not enough for your consistency then add more ) allow to boil the water nicely.
Then add fried egg and mix nicely, cover and cook for 2 to 3min then add garam masala powder, hand crushed kasuri methi and coriander leaves. Give a nice mix enjoy with chapati or rice .
