Biryanis are an absolute skill to get right and I have tried a fair few in my times.
This mushroom biryani is a delicious one pot dish made with simple ingredients and it can be consumed as a full course lunch or dinner meal.
Can be made without any extra efforts like some non vegetarian biryanis.
I have kept it simple using button mushroom, but you can really go to shop and use whatever combination of mushrooms you like.
Ingredients
- Medium size 1 onion chopped length wise
- Medium size 1 tomato chopped
- One cup basmati rice
- Ginger garlic paste 1tsp
- Bay leaf one
- Cinnamon stick one inch
- Cardamom pods 2
- Cloves 2 to 3
- Star Anise 1
- Half cup/1 and half tsp coriander leaves
- Half cup/1 and half tsp mint leaves
- One green chilli slit
- Biryani masala powder 1tsp
- Red chilli powder 1tsp
- Curd 2tsp
- Oil 4tsp
- Turmeric powder half tsp
- Button mushrooms 2 cup
- Water 2 and half to 3 cup
- Kasuri methi half tsp (optional)
- Salt to taste
Method
Soak basmati rice for 20 to 30min, meanwhile chop onion, tomato, mushroom, mint leaves and coriander leaves.
Once everything is ready, in a thick bottom pot add oil, when heated add whole spices like bay leaves, cardamom, cinnamon, cloves and star anise, then add chopped onion, green chilli, ginger and garlic paste, fry untill onion turns golden in colour.
Then add chopped tomato, salt and turmeric powder mix well cover the lid and cook for 3 to 5min or untill the tomato become soft.
Once tomato cooked add chilli powder, biryani masala powder and Kasuri methi ( kasuri methi is totally optional but when added the aroma of biryani doubles) then add curd, chopped mint leaves, coriander leaves, mushrooms and half cup of water cover the lid and cook again till mushroom becomes soft, it hardly takes 5min.
Once mushroom cooked/soften add another one cup water, if previously added water to cook mushroom has drained add little more water. Once water started boiling add soaked basmati rice.
Cover and Cook the biryani in very low flame. It hardly takes 15min to cook. Check the rice once in 8min.
Once cooked Enjoy the mushroom biryani with raitha.
Note:
Water measurements for biryani should be 1:1 and half, means for one cup rice once and half cup water.
The same steps can be done in pressure cooker also with only two whistle.
