Vegetable Poha

Poha is an Maharashtrian delicacy. Which is a perfect balance of taste and nutrition. And Poha is a light breakfast or a snack dish.

So, what could be a better situation when our comfort breakfast of Poha is now vegetable Poha ..!

It’s totally healthy and yummy version so we can enjoy in a guilt free manner.

Poha taste best when it served with kadak chai(tea) for breakfast or as a evening snack.

The recipe that I’m sharing here is south indian style.

Ingredients

  1. Poha(flattened rice) 100grams
  2. Oil 3tsp
  3. Cumin seeds 1tsp
  4. Urad dal half tsp
  5. Bengal gram half tsp
  6. Chopped green chillies 4
  7. Medium size onion chopped 1
  8. Medium size tomato chopped 1
  9. Few curry leaves
  10. Hing pinch
  11. Tumeric powder half tsp
  12. Chilli powder half tsp(optional)
  13. Coriander powder half tsp(optional)
  14. Peanuts 2tsp
  15. Green bell pepper half chopped
  16. One small carrot finely chopped
  17. French beans 5 to 8 finely chopped
  18. Fresh peas half cup
  19. Half lemon juice
  20. Salt to taste
  21. Chopped coriander leaves 2tsp

Method

Place the Poha in a colander and rinse under running water. Stir the Poha gently by using your fingers while rinsing otherwise Poha become mushy while cooking.

Once washed set aside.

Heat the oil in a medium flame , once heated add cumin seeds, curry leaves, Bengal gram, urad dal and peanut . Fry untill Bengal gram changes it colour.

Then add chopped onion fry until onion translucent, then add turmeric powder, bell pepper, chopped tomatoes and salt, fry till the tomato become mushy.

Now add all the chopped veggies like chopped carrots beans and peas. Fry nicely for 5min then add 3tsp of water mix cover and cook in low flame untill the veggies are cooked .

Once veggies are cooked add chilli powder and coriander powder ( adding these two powders are totaly optional) mix nicely and add soaked Poha , lemon juice and give gentle mix until all the ingredients come together. Turn off the flame.

Add chopped coriander leaves and give a last mix. Check the salt and seasoning and adjust to suit your taste and serve hot.

Tips

You can add small potatoe skin peeled and chopped, same as veggies.

While serving garnish with sev bhujia or fresh grated coconut.
