Almond strawberry Oat Crumble Bars

When fresh berries are coming into the season, meaning your dessert using those berries are the sweetest and juiciest. A few days back I have been to the farmers market and found fresh strawberry and I couldn’t resist making these bars. So I’m turning these bars as a healthy version using more almond flour than all-purpose flour.

Strawberry crumble bars could pass for breakfast – what with the oats and all, but they’re equally enjoyable as a dessert with a scoop of vanilla ice cream.

These bars are buttery, crunchy and easy to make.

There are few things to note down here:

1st, always use fresh juicy strawberries, even you can use frozen strawberries but bars doesn’t turn crunch.

2nd, I used brown sugar here instead you can use normal white sugar.

3rd, I have used 3/4 cup almond flour and 3tsp of all-purpose flour, instead of almond flour can make an entire bar with all-purpose flour or can use half-and-half.

Ingredients for crust

  1. Almond flour 3/4 cup
  2. All-purpose flour 3tsp
  3. Rolled oats 120grams
  4. Half cup brown sugar
  5. Half tsp baking powder
  6. Salt 1/4 tsp
  7. Melted butter 3/4 cup
  8. Vanilla essence 1tsp

Ingredients for strawberry filling

  1. Fresh strawberries 300grams
  2. Sugar 2tsp (white)
  3. Cornstarch 1tsp
  4. Lemon zest half tsp


Preheat the oven for 180C, grease the 8*8 pan and line parchment paper. In such a way that one edge should be longer to make it easy to lift it up once done.

In a bowl combine almond flour, all-purpose flour, baking powder, sugar and salt. Add butter, vanilla essence and stir until combine and crumble. Take out one cup of crumble and set aside.

Press remaining crumble in the bottom of the pan with the backside of the flat cup, make sure all the sides are even.

Cut strawberries into small pieces and add sugar, lemon zest, cornstarch then toss to coat. Then spread the coated strawberries over the crust.

Then sprinkle the reserved cup of crumbles over the strawberries.

Bake for 30-40min or until the light brown. Cool Down completely then pull out from the pan and cut into a bar shape.
