Healthy packed savoury muffins these are, and great as a breakfast too!
This recipe is very easy and it takes 30-40min to prepare. I have used only zucchini and cheese anyhow you can customize as you want with carrots, bacon, onion, corn, jalapeno or anything.
There’s is no big list of ingredients or complicated method involved.
- One zucchini grated
- Half cup almond flour
- One cup all-purpose flour
- Half cup grated cheese
- Pepper half tsp
- Chilli flakes half tsp(optional)
- Chopped parsley 2tsp
- Oregano 1tsp
- Whole egg 1
- Salt to taste
- Baking powder half tsp
Preheat the oven for about 200c for 5min and prepare the muffin tray by spreading the oil or butter all over.
Take a mixing bowl to add grated zucchini, parsley, grated cheese, one whole egg, salt, pepper, oregano and chilli flakes. Mix everything
Now first add half cup almond flour, give a mix then add all-purpose flour little by little, by seeing the consistency, better will be thick that’s okay,
Now spoon the batter into a prepared muffin tray and bake for 25 to 30 minutes or until a skewer inserted comes out clean.
Allow the muffins to cool down then enjoy!
